After 5 action packed days we just "hung" on Friday, March 30. It was a chilly day in North Carolina with intermittent sun and clouds. We debated several times whether we would get out, but the bike never moved. It was a good day.
Oh, by the way, here's a killer new recipe I'll bet you haven't tried. I mentioned the Parson's Pub offered an exotic bean dish that we thought was killer. We discussed it and decided that it tasted like huge butter beans baked in spaghetti sauce. So we tried it. Personally, I think we could have substituted our rendition for the one served at the PP. It was killer. So...here's the quick, easy and cheap healthy recipe:
Ingredients:
1 - huge mongo can of Lima beans or Butter beans. Make sure the beans are big!
2 - Your favorite brand (or better yet, homemade) spaghetti sauce.
Directions:
Gently mix the beans and the sauce. Use enough sauce to generously cover the beans.
Bake at 350-400 degrees for 30-45 minutes
Finish off with the broiler just to firm up the top of the casserole. 5 minutes should do.
Eat and enjoy!
